Ingredients

  • 10 oz fresh or frozen peas
  • 1 cup diced celery
  • 1 cup fresh cauliflower florets
  • 1/4 chopped green onion
  • 2 tablespoons chopped pimiento (optional)
  • 1 cup chopped cashews or cashew pieces
  • 1/4 cup cooked crumbled bacon
  • 1/2 cup sour cream
  • 1 cup Ranch Salad Dressing
  • 1/2 teaspoon Dijon mustard
  • 1 small clove minced garlic

Instructions

  1. Rinse peas in hot water or steam if fresh, then drain.
  2. Combine peas, diced celery, cauliflower florets, chopped green onion, pimiento (if using), chopped cashews, and crumbled bacon in a bowl.
  3. Mix sour cream with the prepared Ranch dressing, Dijon mustard, and minced garlic to make the dressing mixture.
  4. Pour the dressing mixture over the vegetable and nut mixture.
  5. Gently toss everything together until evenly coated.
  6. Chill the salad before serving.
