Spring Quiche

Ingredients

  • 2 sheets frozen pie dough
  • 2 tsp olive oil
  • 2 slices bacon, chopped
  • 4 None eggs, lightly beaten
  • 2/3 cup heavy cream
  • 1 None green onion, finely chopped
  • 2 tbsp fresh mint, chopped
  • 1 None zucchini, sliced
  • 2 oz frozen peas, thawed

Instructions

  1. Preheat oven to 400°F. Lightly grease an 8 inch pie dish. Overlap pastry sheets lightly and use to line pan. Chill for 15 mins.
  2. Meanwhile, heat oil over high heat and fry bacon for 3-4 mins, or until golden. Let cool.
  3. Line pie shell with parchment paper and fill with pie weights. Bake for 10-12 mins, or until light golden. Remove baking paper and weights and bake for another 5 mins. Reduce heat to 350°F.
  4. Whisk eggs and cream together. Add green onion and mint. Season. Transfer to pie shell. Arrange bacon, zucchini, peas and feta over top and bake for 30-35 mins, or until firm.
