Ingredients

  • 1 (3 ounce) package lime gelatin
  • 1 cup creamed cottage cheese
  • 3/4 cup boiling water
  • 1/2 cup broken pecans
  • 1 cup evaporated milk
  • 1/2 cup finely chopped celery
  • 1 (8 1/4 ounce) can crushed pineapple
  • 1/2 cup mayonnaise or salad dressing
  • 1 tablespoon lemon juice

Instructions

  1. Dissolve lime gelatin in boiling water.
  2. Cool slightly, then stir in evaporated milk.
  3. Chill until as thick as unbeaten egg whites.
  4. Fold in crushed pineapple, lemon juice, creamed cottage cheese, pecans, celery, and mayonnaise.
  5. Pour into an 8-inch square pan or 5-cup mold.
  6. Chill until firm.
