Ingredients

  • 1 cup mashed potatoes
  • 4 tablespoons margarine
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup flour
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 eggs

Instructions

  1. Cream margarine and sugars in a bowl.
  2. Beat in the eggs, vanilla, and mashed potatoes.
  3. Mix in the flour, baking soda, salt, and cinnamon until well combined.
  4. Pour batter into a greased 9 x 13-inch pan.
  5. Bake at 350°F (175°C) for 20 minutes.
  6. Cut into 2-inch squares while still warm and remove from the pan.
