Ingredients

  • 2 medium butternut or acorn squash
  • 2 Tbsp. rosemary
  • salt
  • pepper

Instructions

  1. Cook the squash in a 350°F oven until tender.
  2. Allow the squash to cool, then peel and mash.
  3. Add rosemary, salt, and pepper to taste.
  4. Spread the mashed squash into a buttered 13 x 9-inch pan.
  5. Shred Asiago cheese and completely cover the top of the squash.
  6. Bake in the 350°F oven for 25 to 30 minutes until bubbly.
