Ingredients

  • 1 2/3 cups sifted flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon soda
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup shortening
  • 1 1/3 cups sugar
  • 1/2 teaspoon vanilla
  • 2 eggs
  • 1 cup mashed, canned or cooked pumpkin
  • 1/3 cup sherry
  • 1/2 cup chopped nuts

Instructions

  1. Sift together the flour, baking powder, soda, salt, cinnamon, and nutmeg.
  2. Cream together the shortening, sugar, and vanilla.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the pumpkin.
  5. Add the dry ingredients alternately with the sherry and blend well.
  6. Stir in the chopped nuts.
  7. Turn the batter into a well-greased 9 x 5-inch loaf pan.
  8. Bake at 350°F (175°C) for 1 hour or until a cake tester inserted in the center comes out clean.
  9. Turn out on a wire rack to cool.
  10. Wrap and refrigerate until ready to slice.
