A flavorful vegetable bake featuring tender squash, zucchini, tomato, and onion layered with basil and Parmesan, perfect as a healthy side or light vegetarian meal.

Ingredients

  • 2 small yellow squash slices
  • 1 medium zucchini
  • 1 large tomato peeled and cut in wedges
  • 1 small onion sliced and rings separated
  • 1 tsp dried basil
  • vegetable cooking spray
  • 2 Tbsp Parmesan cheese

Instructions

  1. Layer the vegetables in a 1 3/4-quart casserole dish, starting with squash, then zucchini, tomatoes, and onion.
  2. Sprinkle with dried basil.
  3. Repeat the layering process.
  4. Spray the casserole dish with vegetable cooking spray.
  5. Melt margarine and pour over the layered vegetables.
  6. Sprinkle Parmesan cheese on top.
  7. Bake at 350°F for 25 to 30 minutes until done.
