Strawberry Pineapple Mold

Ingredients

  • 1 pkg. strawberry Jell-O
  • 1 1/2 cups pineapple syrup
  • 2 Tbsp. lemon juice
  • 3/4 cups strawberries
  • 1 Tbsp. sugar
  • 1 (No 2 1/2) can pineapple chunks
  • 1 pkg. lemon Jell-O
  • 3/4 cups boiling water
  • 1/4 tsp. salt
  • 1 cup cottage cheese
  • 1/2 cup whipping cream
  • 1/2 c. whipping cream

Instructions

  1. Dissolve strawberry Jell-O in pineapple syrup.
  2. Add water to make 1 1/2 cups and stir in lemon juice.
  3. Chill until thick.
  4. Halve strawberries and 1 cup pineapple chunks and fold into the mixture, then chill until firm.
  5. Dissolve lemon Jell-O in boiling water.
  6. Add lemon juice and salt, then cool.
  7. Blend in sieved cottage cheese.
  8. Whip cream and fold in with walnuts.
  9. Layer the lemon Jell-O mixture on top of the fruit layer.
  10. Fill the center with berries and the remaining pineapple chunks.
