Ingredients

  • 3 cups sliced squash
  • 1/2 teaspoon salt
  • dash of pepper
  • 1/2 cup Parmesan cheese
  • 1 cup Bisquick
  • 2 tablespoons parsley flakes
  • 1/2 cup chopped onion
  • 1/2 cup oil

Instructions

  1. Mix together the oil and eggs.
  2. Combine the dry ingredients: Bisquick, Parmesan cheese, parsley flakes, salt, and pepper.
  3. Add sliced squash and chopped onion to the dry mixture and toss to coat.
  4. Arrange the coated mixture in an 8 x 8-inch Pyrex dish.
  5. Pour the oil and egg mixture over the squash and onion in the dish.
  6. Bake at 350°F for 35 minutes.
  7. Cut into squares and serve.
