Ingredients

  • 2 c. finely chopped yellow squash
  • 1 c. finely chopped onion
  • 1 c. finely chopped green pepper
  • 1 egg, beaten
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 c. plus 1 Tbsp. all-purpose flour

Instructions

  1. Combine the finely chopped yellow squash, onion, green pepper, beaten egg, salt, and black pepper; mix well.
  2. Stir in the all-purpose flour.
  3. Drop the mixture by tablespoons into 1/2-inch hot oil.
  4. Cook until browned, turning once.
  5. Drain on paper towels.
