Ingredients

  • 2 medium zucchini
  • 1/2 teaspoon salt
  • 1/2 cup boiling water
  • 3 slices bacon
  • 3 tablespoons onion
  • 2 teaspoons flour
  • 3/4 cup sour cream

Instructions

  1. Peel zucchini and remove seeds.
  2. Shred zucchini and add to salt and boiling water.
  3. Boil for 3 minutes, stirring often.
  4. Drain and reserve 1/3 cup of the squash liquid.
  5. Remove zucchini from pan.
  6. Saute diced bacon until crisp; remove from pan.
  7. Saute diced onion in the bacon fat until golden and soft.
  8. Add flour to the onion and bacon mixture; stir well.
  9. Add reserved squash liquid and bring to a boil.
  10. Stir in sour cream and combine with the cooked zucchini.
  11. Sprinkle bacon over the top just before serving.
