Ingredients

  • 2 1/2 cups sliced unpeeled zucchini or yellow crookneck squash
  • salt
  • 2 1/2 tablespoons butter or margarine
  • 1 cup sliced fresh peaches
  • 2 tablespoons brown sugar

Instructions

  1. Lightly salt the sliced squash.
  2. In a greased 2-quart baking dish, arrange the sliced squash and peaches in alternate layers.
  3. Sprinkle the top with brown sugar and dot with butter.
  4. Cover and bake at 350°F for 45 minutes or until the squash is tender.
