A cheesy, buttery squash casserole with crispy Ritz crackers and Gruyere, perfect as a comforting side dish for family dinners or holiday gatherings.

Ingredients

  • 1 1/2 lb. yellow squash, sliced
  • 1/2 cup butter
  • 1 egg
  • 1/2 onion, chopped
  • salt and pepper
  • 6 Ritz crackers, crushed
  • 2 wedges grated Gruyere cheese

Instructions

  1. Boil the sliced yellow squash; drain and add butter.
  2. Beat the egg and add it to the squash mixture.
  3. Add chopped onion, salt, pepper, and crushed Ritz crackers.
  4. Pour the mixture into a 2-quart Pyrex casserole dish and sprinkle grated Gruyere cheese on top.
  5. Bake at 350°F (175°C) for 20 to 25 minutes until golden and bubbly.
