- Cook squash, onions, and carrots in boiling salted water until tender; drain well.
- Add cream of chicken soup and sour cream; stir until combined.
- Drain pimentos and chop finely.
- Add chopped pimentos to the squash mixture; stir well.
- In a greased casserole dish, mix melted butter with stuffing mix.
- Spread half of the stuffing mixture in the casserole.
- Add the squash mixture over the stuffing layer.
- Cover with remaining stuffing mixture.
- Bake in a preheated 375°F oven for 45 minutes.
