Ingredients

  • 3 lb yellow squash, sliced
  • 2 onions, chopped
  • 2 carrots, sliced
  • 2 cans cream of chicken soup
  • 1 carton sour cream
  • 1 small jar pimentos
  • 1/2 cup melted butter
  • 1 package Pepperidge Farm stuffing mix

Instructions

  1. Cook squash, onions, and carrots in boiling salted water until tender; drain well.
  2. Add cream of chicken soup and sour cream; stir until combined.
  3. Drain pimentos and chop finely.
  4. Add chopped pimentos to the squash mixture; stir well.
  5. In a greased casserole dish, mix melted butter with stuffing mix.
  6. Spread half of the stuffing mixture in the casserole.
  7. Add the squash mixture over the stuffing layer.
  8. Cover with remaining stuffing mixture.
  9. Bake in a preheated 375°F oven for 45 minutes.
