Ingredients

  • 1 lb. butternut squash, peeled, seeded and cubed
  • 1/4 c. fat-free egg substitute
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. freshly grated nutmeg
  • 2 egg whites
  • 1/2 tart apple, finely chopped
  • 1 Tbsp. oleo, melted
  • 1 Tbsp. real maple syrup
  • nonstick cooking spray

Instructions

  1. Steam the butternut squash until very tender, about 10 minutes.
  2. Transfer the cooked squash to a food processor. Add the egg substitute, ground cinnamon, and grated nutmeg.
  3. Puree the mixture until smooth, then transfer to a large bowl.
  4. Stir in the finely chopped tart apple, melted oleo, and maple syrup.
  5. Spray a baking dish with nonstick cooking spray.
  6. Pour the mixture into the prepared dish.
  7. Bake at 350°F (175°C) until puffed and lightly browned, about 20-25 minutes.
  8. Serve warm.
