  • 1/2 tsp. salt
  • 1 cup sugar

  2. In a medium bowl, combine eggs, melted and cooled shortening, and vanilla.
  3. Stir in mincemeat and chopped nuts.
  4. Pour the egg mixture into the dry ingredients and stir only enough to moisten the flour.
  5. Spoon batter into a greased 9 x 5-inch loaf pan.
  6. Bake in a preheated 350°F (175°C) oven for 1 hour or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes. Remove from pan to a rack and cool completely.
