Instructions
- Cook the yellow squash in a small amount of water until tender, then drain and mash.
- Season the mashed squash to taste.
- Stir in chopped pimentos, chopped onion, sour cream, cream of chicken soup, and grated carrots.
- Mix half of the cornbread or cornbread stuffing with melted butter.
- Line a casserole dish with the reserved cornbread mixture.
- Fill the casserole with the squash mixture.
- Top with the remaining cornbread.
- Bake for 30 minutes at 350°F.
