Ingredients

  • 1 1/2 lb. fresh yellow squash
  • 1 (2 oz.) jar chopped pimentos
  • 1 small onion
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 4 small grated carrots
  • 4 cups cornbread or 1 package cornbread stuffing
  • 3/4 cup melted butter

Instructions

  1. Cook the yellow squash in a small amount of water until tender, then drain and mash.
  2. Season the mashed squash to taste.
  3. Stir in chopped pimentos, chopped onion, sour cream, cream of chicken soup, and grated carrots.
  4. Mix half of the cornbread or cornbread stuffing with melted butter.
  5. Line a casserole dish with the reserved cornbread mixture.
  6. Fill the casserole with the squash mixture.
  7. Top with the remaining cornbread.
  8. Bake for 30 minutes at 350°F.
