Ingredients

  • 1 c. water
  • 1/2 c. butter
  • 1 tsp. sugar
  • 1 c. all-purpose flour
  • 4 large eggs

Instructions

  1. Combine water, butter, sugar, and salt in a saucepan and bring to a boil.
  2. Add flour all at once, then beat with a wooden spoon for 1 minute or until the mixture leaves the sides of the pan and forms a ball. Cool the mixture.
  3. Add eggs one at a time, beating after each egg, until the mixture has a satin-like sheen.
  4. Use a pastry bag with a large star tip and fill it with the mixture.
  5. Make a doughnut shape with the pastry bag on a greased cookie sheet.
  6. Bake in a 400° oven for 20 minutes or until puffed and well browned.
  7. Cool.
  8. Slice each zeppole in half and fill with your desired filling.
