- 2 medium onions, chopped ⓘ
- 1/2 head cauliflower, chopped ⓘ
- 1 green pepper, chopped ⓘ
- 1/2 c. fresh parsley, chopped ⓘ
- 1/4 lb. mushrooms, sliced
- 8 cloves garlic, minced ⓘ
- 2 very large cans Italian tomatoes ⓘ
- 1 bay leaf ⓘ
- 1 tsp. dried basil ⓘ
- 1 tsp. oregano ⓘ
- 1 tsp. thyme ⓘ
- 1/2 tsp. marjoram ⓘ
- 1/2 tsp. rosemary ⓘ
- 1/2 tsp. salt, optional ⓘ
- 1 c. dry red or white wine ⓘ
Instructions
- Heat oil in a large pot.
- Add all the vegetables and the garlic. Saute over medium heat for 15 minutes, stirring frequently.
- Add tomatoes and tomato sauce along with all the seasonings.
- Bring to a boil and then reduce heat.
- Cover and simmer for 3 to 4 hours.
- During the last hour of cooking, add the wine.
