Ingredients

  • 3 to 4 cups sliced peaches
  • 1 tablespoon tapioca
  • 2 tablespoons cornstarch
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 1 cup white sugar
  • 1 teaspoon lemon juice
  • dash of salt
  • 2 tablespoons margarine

Instructions

  1. Mix tapioca, cornstarch, brown sugar, white sugar, lemon juice, and salt in a saucepan.
  2. Bring to a boil and boil for 1 minute, stirring constantly.
  3. Pour the filling into the prepared pie crust.
  4. Sprinkle with nutmeg and dot with margarine.
  5. Add the top crust which has been pricked with a fork.
  6. Seal and flute the edges.
  7. Bake in a moderate oven at 400°F for 35 minutes.
  8. Cool before serving.
