Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 4 eggs
  • 3 cups sifted cake flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Luscious White Frosting
  • 1 small fresh coconut, grated

Instructions

  1. Cream shortening; gradually add sugar, beating until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine sifted cake flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition.
  4. Stir in almond and vanilla extracts.
  5. Pour batter into three greased and floured 9-inch round cake pans.
  6. Bake at 375°F (190°C) for 20 to 25 minutes or until a wooden toothpick inserted in the center comes out clean.
  7. Cool in pans for 10 minutes.
  8. Remove from pans and let cool completely.
  9. Spread Lemon-Orange Filling between layers.
  10. Spread white frosting over the top and sides of the cake, then sprinkle with grated coconut.
