Steak au Poivre features tender beef fillets coated with crushed peppercorns, seared to perfection, offering a bold peppery flavor that elevates this classic French dish for meat lovers.

Ingredients

  • 4 Tbsp. mixed black and white whole peppers
  • 6 beef fillets (1-inch thick)
  • 2 Tbsp. peanut oil
  • 1 Tbsp. butter
  • salt to taste

Instructions

  1. Crush peppercorns in a pepper mill.
  2. Press the crushed pepper into both sides of each beef fillet with your hands.
  3. Cover the coated steaks with waxed paper or plastic wrap and let stand in the refrigerator for 1 to 3 hours.
  4. Put oil and butter into a heavy skillet and heat over medium-high heat until the butter begins to sizzle.
  5. Saute the steaks for 3 to 4 minutes on each side until they reach your desired level of doneness, from rare to medium-rare.
  6. Remove the steaks to a heated platter and keep warm while preparing the sauce.
