Ingredients

  • 1 lb. ground beef
  • 1 egg
  • 1/3 cup uncooked rice
  • salt
  • pepper
  • 1/2 cup margarine
  • 1/2 cup chopped celery
  • 1/2 cup chopped parsley
  • 1 can tomato soup
  • 1 tablespoon brown sugar
  • 1 lemon

Instructions

  1. Season ground beef with salt, pepper, and beaten egg.
  2. Mix in uncooked rice thoroughly.
  3. Dip cabbage head in boiling water to loosen the leaves.
  4. Brown butter in a large skillet; add chopped celery, onion, and parsley, and cook until softened.
  5. Add brown sugar, lemon juice, and tomato soup to the skillet, stirring to combine.
  6. Remove cabbage leaves carefully, and place a spoonful of meat mixture on each leaf.
  7. Roll each leaf lightly around the filling.
  8. Arrange the stuffed cabbage rolls in a pot or baking dish.
  9. Pour the sauce over the rolls to cover.
  10. Simmer covered for 1.5 hours until cooked through and flavors meld.
