Ingredients

  • 1 (13 1/4 oz.) can pineapple chunks in juice
  • 2 Tbsp. cornstarch
  • 1 Tbsp. brown sugar
  • 1 Tbsp. soy sauce
  • 1/4 tsp. pepper
  • 2 Tbsp. oil
  • 1 lb. beef round steak, cut into strips
  • 1 medium green pepper, cut into 1/4-inch strips
  • 2 medium tomatoes, cut into wedges

Instructions

  1. Drain pineapple chunks; reserve juice.
  2. Combine cornstarch, brown sugar, soy sauce, and pepper; set aside.
  3. Stir-fry beef with oil in a wok or skillet until browned.
  4. Add green pepper and 2 tablespoons water to the wok.
  5. Stir-fry for 2 minutes.
  6. Add pineapple chunks, pineapple juice, and tomato wedges to the wok.
  7. Add the reserved cornstarch mixture.
  8. Cook, stirring, until the sauce thickens.
  9. Serve over rice.
