Ingredients

  • 8 oz. flank steak
  • 1/4 c. soy sauce
  • 1/4 c. water
  • 4 oz. shredded Jack cheese
  • 1/4 c. diced tomatoes
  • 1 tsp. diced jalapenos
  • 1 tsp. chopped cilantro
  • 2 (10 inch) flour tortillas

Instructions

  1. Pound the flank steak with a tenderizing mallet.
  2. Marinate the steak in soy sauce and water for 1 hour.
  3. Grill the steak until done and slice across the grain into very thin strips.
  4. In a large skillet, lay down one tortilla and spread with half of the cheese, diced tomatoes, jalapenos, and chopped cilantro.
  5. Top with half of the steak and cover with another tortilla.
  6. Cook on the stove until the bottom tortilla is toasted.
  7. Flip the quesadilla over and cook until the other side is toasted and the cheese is melted.
  8. Remove from the pan, cut into sixths, and serve with salsa and sour cream.
  9. Repeat the process for additional quesadillas if desired.
