"Stompin" Good Stew

Ingredients

  • 1 lb. lean ground beef or turkey
  • 1 large onion, chopped
  • 3 garlic cloves, sliced thin
  • 2 tsp. chili powder
  • 1 tsp. tarragon
  • 4 beef or chicken bouillon cubes
  • 2 c. sliced celery
  • 1 (No. 2 1/2) can crushed tomatoes
  • 1/2 c. pearl barley
  • 2 Tbsp. lemon juice
  • 1 small head cabbage, coarsely chopped
  • 16 oz. frozen mixed vegetables
  • 1 Tbsp. parsley flakes
  • 1 qt. water
  • 4 oz. shell macaroni
  • 3 Tbsp. cornstarch

Instructions

  1. Brown crumbled meat with onion and garlic.
  2. Add remaining ingredients except cornstarch and 1/4 cup water.
  3. Bring to boil, then simmer 20 to 30 minutes until barley is tender.
  4. Mix cornstarch with 1/4 cup water; stir into hot stew.
  5. Cook, stirring, until clear and thickened.
  6. Serves 6.
