Ingredients

  • 1 cup sifted cake flour
  • 1 teaspoon double-acting baking powder
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup confectioners sugar
  • 1 cup fresh sliced strawberries
  • 1 pint strawberry ice cream, softened

Instructions

  1. Sift together the cake flour, double-acting baking powder, and salt.
  2. In a separate bowl, beat eggs with vanilla extract until fluffy and light in color.
  3. Gradually beat in the granulated sugar.
  4. Stir in water until well combined.
  5. Fold in the sifted dry ingredients carefully but thoroughly.
  6. Turn the batter into a waxed paper-lined 15 x 10 x 1-inch baking pan.
  7. Bake in a preheated 350°F oven for 15 minutes or until done.
  8. Sift confectioners sugar evenly onto a smooth dish towel.
  9. Turn the hot cake onto the towel and carefully peel off the paper.
  10. Roll up the cake from the short end, jelly roll fashion, and let it cool.
  11. Mix the softened strawberry ice cream with fresh sliced strawberries.
  12. Unroll the cooled cake and spread the ice cream mixture evenly over it.
  13. Re-roll the cake, wrap in foil, and freeze.
  14. Thaw for 10 minutes before serving.
