Ingredients

  • 1 1/2 cups sugar
  • 6 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 2 egg yolks
  • 1 tablespoon butter or margarine
  • 1 teaspoon vanilla extract
  • 1 baked 9-inch pie shell
  • 1 cup water
  • 1 tablespoon liquid red food coloring
  • 6 cups fresh strawberries
  • sweetened whipping cream and fresh strawberries (garnish)

Instructions

  1. In a saucepan, combine 2/3 cup sugar, 4 tablespoons cornstarch and salt; stir in milk.
  2. Bring to a boil over medium heat.
  3. Cook, stirring constantly, for 1 minute until thickened.
  4. Let the mixture come to a boil slowly; when boiling begins, it will start to thicken.
  5. Remove from heat and stir in butter or margarine and vanilla extract.
  6. Pour the custard into the baked 9-inch pie shell.
  7. In a separate bowl, combine 1 cup water with 1 tablespoon of liquid red food coloring, then add 3 cups of halved strawberries.
  8. Arrange the strawberries on top of the custard in the pie shell.
  9. Refrigerate the pie until chilled, then garnish with sweetened whipped cream and additional strawberries before serving.
