Strawberry Custard Pie

Ingredients
- 1 1/2 cups sugar ⓘ
- 6 tablespoons cornstarch ⓘ
- 1/4 teaspoon salt ⓘ
- 2 cups milk ⓘ
- 2 egg yolks
- 1 tablespoon butter or margarine ⓘ
- 1 teaspoon vanilla extract ⓘ
- 1 baked 9-inch pie shell ⓘ
- 1 cup water ⓘ
- 1 tablespoon liquid red food coloring ⓘ
- 6 cups fresh strawberries ⓘ
- sweetened whipping cream and fresh strawberries (garnish) ⓘ
Instructions
- In a saucepan, combine 2/3 cup sugar, 4 tablespoons cornstarch and salt; stir in milk.
- Bring to a boil over medium heat.
- Cook, stirring constantly, for 1 minute until thickened.
- Let the mixture come to a boil slowly; when boiling begins, it will start to thicken.
- Remove from heat and stir in butter or margarine and vanilla extract.
- Pour the custard into the baked 9-inch pie shell.
- In a separate bowl, combine 1 cup water with 1 tablespoon of liquid red food coloring, then add 3 cups of halved strawberries.
- Arrange the strawberries on top of the custard in the pie shell.
- Refrigerate the pie until chilled, then garnish with sweetened whipped cream and additional strawberries before serving.
