Strawberry Dressing

A light and fruity strawberry dressing with hints of lemon, pineapple, and nutmeg, perfect for salads, fruit desserts, or as a sweet topping for various dishes.

Ingredients

  • juice of 1/2 lemon
  • 1/2 cup pineapple juice
  • 2 teaspoons sugar
  • 2 egg yolks
  • 1/2 cup heavy cream, whipped
  • dash of nutmeg

Instructions

  1. Heat the lemon juice, pineapple juice, and sugar to boiling. Remove from heat.
  2. Beat the egg yolks well and slowly add a small amount of the hot fruit syrup, stirring constantly.
  3. Return the mixture to the hot syrup, beating constantly with a wire whip.
  4. Return to low heat and cook until thickened.
  5. Remove from heat and allow to cool.
  6. Fold in the whipped heavy cream and a dash of nutmeg.
  7. Serve as a dressing or topping. Makes about 1 1/2 cups.
