Ingredients

  • 1 pkg. yellow cake mix
  • 1/4 c. water
  • 1 1/3 c. flaked coconut
  • 1 qt. fresh strawberries, sliced and sweetened
  • 1 large egg
  • 1/4 c. shortening
  • 1 c. heavy cream

Instructions

  1. Combine the yellow cake mix, egg, water, shortening, and 1 cup of coconut; mix well.
  2. Pour the batter into a greased 9 x 13-inch pan.
  3. Bake in a preheated oven at 350°F for 18 to 20 minutes.
  4. Allow the cake to cool completely.
  5. Whip the heavy cream until stiff peaks form.
  6. Fold in the sliced and sweetened strawberries into the whipped cream.
  7. Spread the strawberry-cream mixture over the cooled cake.
  8. Top with the remaining coconut flakes.
