Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 10-ounce packages frozen strawberries, thawed and chopped
  • 1 cup pecans

Instructions

  1. Combine the all-purpose flour, sugar, baking soda, salt, and ground cinnamon in a large mixing bowl. Make a well in the center of the mixture.
  2. In a separate bowl, beat the eggs and then stir in the vegetable oil.
  3. Add the beaten eggs and oil mixture to the well in the dry ingredients, stirring just until combined.
  4. Fold in the thawed and chopped strawberries and pecans gently.
  5. Pour the batter into a greased or parchment-lined loaf pan.
  6. Bake at 350°F (175°C) for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
