Ingredients

  • 1 cup water
  • 1 (3 oz.) package strawberry flavored gelatin
  • 1/2 cup cold water
  • 1 pint vanilla ice cream
  • 1 cup sliced fresh strawberries
  • 1 (9-inch) baked pie shell

Instructions

  1. Heat water to boiling in a 2-quart saucepan; remove from heat.
  2. Add strawberry flavored gelatin and stir until dissolved.
  3. Add 1/2 cup cold water and stir.
  4. Cut vanilla ice cream into six pieces; add to hot liquid and stir until melted.
  5. Chill until mixture begins to thicken and mounds when spooned, about 20 to 25 minutes.
  6. Fold in sliced fresh strawberries.
  7. Pour the mixture into the cooled, baked pie shell.
  8. Garnish with whipped cream and sliced strawberries if desired.
  9. Chill for 20 to 25 minutes or until firm before serving.
