Ingredients

  • 1 (9-inch) baked pie shell
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 egg
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla

Instructions

  1. Combine sugar, cornstarch, flour, and salt in a saucepan.
  2. Gradually add milk, stirring until smooth.
  3. Cook until very thick and bubbling.
  4. Stir a small amount of hot mixture into the beaten egg.
  5. Return egg mixture to hot mixture; cook, then chill thoroughly.
  6. Beat the mixture until smooth and velvety.
  7. Whip the heavy cream and fold into the filling mixture.
  8. Add vanilla to the filling.
  9. Pour the filling into the baked pie shell.
  10. Refrigerate until serving time.
  11. Top the pie with thickened strawberries before serving.
