Creamy stuffed baked potatoes feature fluffy mashed interiors topped with cheddar cheese, ideal for comfort food lovers and perfect as a hearty side or main dish.

Ingredients

  • 1 cup sour cream
  • 1/4 cup butter
  • 1 egg
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
  • Grated Cheddar cheese

Instructions

  1. Bake 6 large potatoes at 400 degrees for 1 1/2 hours.
  2. Cut the baked potatoes lengthwise into halves.
  3. Scoop out the potato flesh, leaving the skins intact.
  4. Mash all the potato flesh in a bowl.
  5. Add sour cream, butter, beaten egg, salt, and pepper to the mashed potatoes and mix until fluffy.
  6. Add a small amount of milk if needed to achieve desired consistency.
  7. Fill the potato skins with the mashed mixture.
  8. Sprinkle grated Cheddar cheese over each filled potato half.
  9. Optional: sprinkle a dash of paprika on top before serving.
