A flavorful baked salmon stuffed with rice, celery, onion, lemon zest, and herbs, perfect for elegant dinners or special occasions with bright citrus flavors.

Ingredients

  • 1/3 cup oleo
  • 1/3 cup chopped onion
  • 1 tablespoon grated lemon rind
  • 1/4 cup lemon juice
  • 1 cup diced celery
  • 3 cups cooked rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon thyme

Instructions

  1. Melt oleo (butter) in a pan; sauté chopped onion and diced celery until tender.
  2. Toss the sautéed vegetables with cooked rice, grated lemon rind, salt, thyme, and lemon juice.
  3. Sprinkle inside of a large salmon with salt and stuff the fish with the rice mixture.
  4. Spray foil and wrap the stuffed fish in foil.
  5. Prick holes in the bottom of the foil-wrapped fish.
  6. Measure the thickness of the fish at the thickest part and bake in a 450°F oven, allowing 10 minutes cooking time for each inch of thickness.
  7. Serve the baked stuffed salmon with lemon slices.
