Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb. ground beef
  • 4 c. coarsely shredded cabbage
  • 1 large onion
  • 28 oz. crushed tomatoes
  • 14.5 oz. beef broth
  • 14.5 oz. beef broth
  • 1 c. water
  • 1/2 c. light brown sugar
  • 1 Tbsp. lemon juice
  • 1 tsp. salt

Instructions

  1. Saute ground beef in vegetable oil in a 6-quart pot over medium heat.
  2. Add shredded cabbage and chopped onion, cover, and cook for about 4 minutes, stirring once.
  3. Add crushed tomatoes, beef broth, water, sugar, lemon juice, and salt.
  4. Bring to a boil, then add the rice.
  5. Reduce heat to medium low and cover.
  6. Simmer for 45 minutes or until the rice is tender.
  7. Serve hot, yielding 8 servings.
