Ingredients

  • 7 lb. ground beef
  • 4 lb. ground veal
  • 3 c. rice (uncooked)
  • 2 (No. 5) cans tomato soup
  • 1/2 (No. 10) can crushed tomatoes
  • 4 lb. ground pork
  • 6 onions, chopped
  • 8 large cabbage heads
  • 10 whole eggs
  • salt and pepper to taste

Instructions

  1. Mix together pork, beef, veal, eggs, onions, rice, salt, and pepper.
  2. Remove the core from cabbage heads and soak them in hot water to soften the leaves.
  3. Take approximately 3 tablespoons of meat mixture and place it in a cabbage leaf, then wrap it.
  4. Place the cabbage rolls in a baking dish.
  5. Combine tomato soup, crushed tomatoes, some water, salt, and pepper to make the sauce.
  6. Pour the sauce over the cabbage rolls after they have been in the oven for 25 minutes.
  7. Bake in a 350°F oven for 1 1/2 hours.

Tips & Substitutions

For a lighter version, you can substitute ground turkey for the beef and pork. If you prefer a vegetarian option, consider using lentils or a mix of chopped mushrooms and vegetables instead of meat. Ensure to season well since these ingredients may need extra flavor. Soaking the cabbage leaves in hot water helps make them pliable; you can also freeze the cabbage heads beforehand to make peeling easier.

Serving Suggestions

Stuffed cabbage pairs beautifully with a side of crusty bread or buttered noodles. A fresh green salad can complement the dish well. For a comforting meal, serve it alongside Hearty Goulash Soup. Consider garnishing with fresh parsley for an extra touch of flavor and color.

Storage & Reheating

Leftover stuffed cabbage can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place the rolls in a baking dish, cover with foil, and warm them in a 350°F oven for about 30 minutes. You can also microwave individual rolls for quick reheating, ensuring they are heated through.

Frequently Asked Questions

Can I make stuffed cabbage ahead of time?

Yes, you can prepare stuffed cabbage in advance. Assemble the rolls and place them in the baking dish, cover tightly, and refrigerate for up to a day before baking. This allows the flavors to meld, making for a delicious meal on the day you bake it.

What can I use instead of tomato soup?

If you don’t have tomato soup, you can substitute it with crushed tomatoes or tomato sauce mixed with a bit of sugar to mimic the sweetness. Adding a splash of broth can enhance the flavor profile as well.

Can I freeze stuffed cabbage?

Absolutely! Stuffed cabbage can be frozen before or after cooking. If freezing raw, wrap them tightly in plastic wrap and store in a freezer-safe container. Cooked cabbage rolls should cool completely before freezing. They can be reheated from frozen; just add extra cooking time.
