Stuffed Chayote Pears

Ingredients

  • 8 chayote pears
  • 2 large onions
  • 2 large cloves garlic
  • 1 cup chopped celery
  • 2 pounds cooked shrimp
  • 1 pound cooked ham
  • 1/2 cup grated Cheddar cheese
  • 1/2 cup Italian bread crumbs
  • salt to taste

Instructions

  1. Halve the chayote pears horizontally and remove the seeds.
  2. Place the pear halves in a large Ziploc bag.
  3. Cook the pears on high for 20 minutes.
  4. Sauté ham, onions, and garlic with a tablespoon of butter until vegetables are transparent.
  5. Add celery and cook until tender.
  6. Let the cooked chayote pear halves cool, then scoop out the meat from outside shells.
  7. Mash the chayote pear meat and mix with cooked shrimp and grated Cheddar cheese.
  8. Add the mixture to the skillet with the sautéed ingredients.
  9. Stir in Italian bread crumbs.
  10. Place the mixture in a greased 8 x 12-inch casserole dish.
  11. Cover with additional seasoned bread crumbs and cheese.
  12. Bake at 350°F for 30 minutes.
