  • 6 Tbsp. shallots, chopped
  • 5 Tbsp. butter
  • 6 1-inch thick pork chops
  • flour
  • 3 Tbsp. olive oil
  • salt and pepper
  • 1 cup dry white wine
  • 1/2 cup whipping cream
  • 2 heaping tsp. Dijon mustard

Instructions

  1. Saute shallots in 2 tablespoons of butter in a pan; set aside.
  2. Wipe surface of chops with a damp cloth and sprinkle with flour.
  3. In a large skillet, heat remaining butter and olive oil until sizzling hot.
  4. Saute chops quickly until golden on both sides.
  5. Reduce heat and cook slowly for 10 minutes.
  6. Season chops with salt and pepper.
  7. Place chops in an oven-safe pan.
  8. Preheat oven to 400°F (200°C).
  9. Add white wine to the skillet and reduce to a syrupy consistency.
  10. Pour the wine sauce over the chops.
