Creamy stuffed baked potatoes with blue cheese and bacon offer rich, bold flavors, perfect as a comforting side or hearty appetizer for cheese lovers and bacon fans.

Ingredients

  • 4 medium baking potatoes
  • 1/2 cup sour cream
  • 1/2 cup crumbled Blue cheese
  • 1/4 cup milk
  • 4 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Bake potatoes at 400°F until tender.
  2. Remove from oven, cut a lengthwise slice from the top of each potato.
  3. Scoop out the inside and mash with sour cream, blue cheese, milk, melted butter, salt, and pepper until fluffy.
  4. Spoon the mixture into the potato shells.
  5. Place on a baking sheet and return to the oven for 15 minutes or until heated through.
  6. Sprinkle with crumbled bacon before serving.
