Ingredients

  • 8 boned fryer chicken thighs
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 1/2 teaspoon garlic salt
  • 3 slices bacon
  • 2 tablespoons sherry
  • 1/4 teaspoon poultry seasoning
  • 1/4 teaspoon pepper
  • 2 cups soft bread crumbs

Instructions

  1. Cook bacon in a small pan over low heat until crisp, about 10 minutes.
  2. Remove bacon, crumble, and set aside.
  3. Pour off drippings, reserving 2 tablespoons for later.
  4. Add celery and onion to the drippings in the pan.
  5. Saute for 5 minutes or until vegetables are soft.
  6. Remove from heat and stir in sherry, poultry seasoning, 1/8 teaspoon pepper, bread crumbs, and bacon.
  7. Mix thoroughly until well combined.
  8. Stuff the mixture into the boned chicken thighs, then sew or secure with toothpicks.
  9. Bake in a preheated oven at 375°F (190°C) until chicken is cooked through, about 30-40 minutes.
