Ingredients

  • 3 medium eggplants
  • 1 1/2 lb. ground beef (cooked)
  • 1 medium can tomato sauce
  • 1 tsp. garlic salt
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. green onions, minced
  • 18 slices Mozzarella cheese
  • 2 pkg. green beans (frozen)

Instructions

  1. Cut the eggplants in half lengthwise and carefully remove the eggplant meat to a bowl, leaving about 1/2-inch of shell intact.
  2. Chop the removed eggplant meat and add it to the bowl with ground beef, tomato sauce, garlic salt, salt, pepper, oregano, and green onions.
  3. Mix the ingredients thoroughly until well combined.
  4. Stuff the eggplant shells with the meat mixture and place slices of mozzarella cheese on top.
  5. Arrange the stuffed eggplants in a baking dish and bake at 375°F (190°C) for about 30-40 minutes until the eggplants are tender and the cheese is melted and bubbly.
  6. While baking, cook the green beans according to package instructions, then serve alongside the stuffed eggplants.
