Ingredients

  • 2 c. cooked, chopped lobster meat
  • 2 c. cold water
  • 4 Tbsp. soft butter
  • 3 Tbsp. unbleached all-purpose flour
  • 4 c. low-fat milk
  • salt to taste
  • pepper to taste

Instructions

  1. Combine the lobster meat and cold water in a large pot and simmer, covered, for 15 minutes.
  2. In a large saucepan, melt the butter and blend in the flour.
  3. Gradually add the milk and cook until thickened, stirring frequently.
  4. Add the milk mixture to the lobster mixture and stir well.
  5. Reheat the soup gently.
  6. Season with salt, pepper, and a dash of cayenne pepper to taste, then serve.
