Ingredients

  • 6 large bell peppers
  • 1 small can tomato sauce
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 egg
  • 1 1/2 tsp salt
  • dash of pepper
  • 1/4 cup evaporated milk
  • 2 tbsp catsup
  • 1/2 cup barbecue sauce
  • 1/4 cup chopped onion

Instructions

  1. Blanch the bell peppers in boiling water for 5 minutes, then drain and set aside.
  2. In a mixing bowl, combine ground beef, cooked rice, egg, salt, pepper, chopped onion, chopped bell pepper tops, evaporated milk, catsup, and barbecue sauce.
  3. Stuff each blanched pepper with the meat and rice mixture.
  4. Place the stuffed peppers in a covered casserole dish.
  5. Pour tomato sauce over the peppers.
  6. Bake in a preheated oven at 350°F (175°C) for 1 hour.
