  • 1 lb. cooked bulk pork sausage

  1. Bring 2 quarts of water to a rolling boil in a large saucepan.
  2. Place the halved and seeded green peppers in the boiling water and cook for 15 minutes.
  3. Drain the peppers and arrange, cut side up, around the bottom of an ungreased pie pan.
  4. Preheat the oven to 350°F (175°C).
  5. In the same saucepan, combine 1 cup of water and margarine or butter, and heat to boiling.
  6. Remove from heat and stir in the potato flakes, milk, and beaten egg until well mixed.
  7. Stir in the cooked and drained pork sausage.
  8. Spoon the sausage and potato mixture into the pepper-lined pan.
  9. Arrange tomato wedges on top of the filling.
  10. Sprinkle with cheese and bake at 350°F (175°C) for 15 to 20 minutes.
