- Parboil the green peppers; drain and set aside to cool.
- In a thick pan, melt butter and sauté onions.
- Add chopped sausage to the onions and cook until well browned.
- Stir in the rice and cook until browned.
- Gradually add warm water mixture to the rice, stirring until absorbed.
- Repeat until rice is fully cooked, then season with salt and pepper.
- Remove from heat and mix in Parmesan cheese to taste.
- Fill each pepper with the rice mixture.
- Place a slice of mozzarella cheese on top of each filled pepper and add a dot of butter.
- Bake at 350°F for 10 minutes or until cheese is melted and bubbly.
