Ingredients

  • 4 green peppers
  • 4 Tbsp butter
  • 1 chopped onion
  • 2 Italian sweet sausages
  • Parmesan cheese
  • salt
  • pepper
  • 2 cups rice
  • 4 slices Mozzarella

Instructions

  1. Parboil the green peppers; drain and set aside to cool.
  2. In a thick pan, melt butter and sauté onions.
  3. Add chopped sausage to the onions and cook until well browned.
  4. Stir in the rice and cook until browned.
  5. Gradually add warm water mixture to the rice, stirring until absorbed.
  6. Repeat until rice is fully cooked, then season with salt and pepper.
  7. Remove from heat and mix in Parmesan cheese to taste.
  8. Fill each pepper with the rice mixture.
  9. Place a slice of mozzarella cheese on top of each filled pepper and add a dot of butter.
  10. Bake at 350°F for 10 minutes or until cheese is melted and bubbly.
