Ingredients

  • 6 medium yellow squash
  • 1 cup chopped onion
  • 1 cup fresh peeled and chopped tomatoes
  • 1/2 cup chopped bell pepper
  • 1/2 cup grated Cheddar cheese
  • 3 slices bacon, cooked and crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Simmer whole squash for 8 to 10 minutes until tender but firm. Slice in half and scoop out the center, leaving a firm shell.
  2. Combine the pulp with chopped onion, fresh tomatoes, bell pepper, grated Cheddar, cooked crumbled bacon, salt, and pepper.
  3. Fill the squash shells with the mixture and place in a greased 9 x 13-inch casserole dish.
  4. Dot the filled squash with small pats of butter.
  5. Bake at 400°F for 20 minutes.
