Ingredients

  • 1 1/2 c. Bisquick
  • 1/2 stick butter or oleo
  • 1 c. sugar
  • 1 c. or more pecans
  • 2 c. water
  • 4 c. blueberries, drained
  • 1 large can crushed pineapple, drained
  • 1 large Cool Whip topping
  • 1 (8 oz.) cream cheese
  • 2 Tbsp. cornstarch

Instructions

  1. Mix Bisquick, softened butter, 1/2 cup sugar, and pecans until crumbly.
  2. Press the mixture into a pan, smoothing the top; no greasing needed.
  3. Bake at 350°F until lightly browned.
  4. Drain blueberries and set aside.
  5. In a saucepan, combine 1/2 cup sugar, cornstarch, and water; heat over medium until thickening and boiling.
  6. Add blueberries, boiling for one minute while stirring.
  7. Remove from heat, let cool slightly; the sauce should be thick.
  8. Whip cream cheese and Cool Whip together until smooth.
  9. Drain pineapple and spread a layer over the cooled crust.
  10. Spread half of the cream cheese topping over the pineapple.
  11. Add the blueberry sauce on top{}
  12. Spread remaining cream cheese topping over the blueberries.
  13. Sprinkle remaining pecans on top if desired.
  14. Refrigerate until chilled before serving.
