Ingredients

  • 2 c. water
  • 3/4 tsp. salt
  • 2 c. Minute rice
  • 1/2 c. prepared Good Seasons Italian or Zesty Italian salad dressing
  • 1 1/2 tsp. hot pepper sauce
  • 2 tsp. prepared hot spicy mustard
  • 2 hard-cooked eggs, chopped
  • 1/2 c. chopped celery
  • 1/2 c. toasted pecans, cut into pieces
  • 1/4 c. sliced scallions
  • 1/4 c. sliced, stuffed green olives
  • 1/4 c. chopped parsley
  • 1/4 c. sweet pickle relish
  • 1 Tbsp. diced dill pickle

Instructions

  1. Bring water and salt to a full boil in a medium saucepan.
  2. Stir in the rice.
  3. Cover the pot.
  4. Remove from heat and let stand 5 minutes, then fluff with a fork.
  5. Cool the rice completely.
  6. In a small bowl, combine the salad dressing, hot pepper sauce, and hot spicy mustard; blend well.
  7. In a large bowl, combine the cooled rice with the eggs, celery, toasted pecans, scallions, stuffed green olives, parsley, sweet pickle relish, and diced dill pickle.
  8. Spoon the dressing mixture over the salad and toss to coat evenly.
  9. Cover the bowl and chill in the refrigerator.
  10. Serve chilled as a side dish for 6 servings.
