Ingredients

  • 1 1/3 cups sugar
  • 2 2/3 cups flour
  • 1 tablespoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 3 eggs
  • 1 cup vegetable oil
  • 2 jars plum baby food (1 cup total)
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F.
  2. Combine sugar, flour, baking powder, pumpkin pie spice, and salt in a large bowl; set aside.
  3. In a separate bowl, mix eggs, vegetable oil, and plum baby food.
  4. Stir the liquid mixture into the dry ingredients until just moistened.
  5. Fold in chopped pecans.
  6. Divide the batter evenly between 2 ungreased loaf pans.
  7. Bake for 45 to 55 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pans before removing.
